Labor Day is upon us, and that means it’s time to fire up the grill and gather with loved ones. To help you bid farewell to summer, Coursey Graves-style, we put together a menu of staff favorites that pair perfectly with some of your favorite wines.

Coursey Graves Chardonnay:
Lemony Shrimp Salad with Herb Vinaigrette

This light and refreshing salad lets the citrus notes of your Chardonnay shine.

Ingredients:

  • 1 pound cooked and chilled shrimp, deveined and halved
  • 2 stalks celery, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley

For the Vinaigrette:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine shrimp, celery, onion, dill, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and oregano. Season with salt and pepper.
  3. Pour the vinaigrette over the salad and toss to coat.
  4. Serve chilled on a bed of lettuce.

Works & Days Sonoma Coast Pinot Noir:
Smoky Grilled Vegetables

The earthy and savory notes of our Sonoma Coast Pinot Noir are a perfect match for the smoky flavors of grilled vegetables.

Ingredients:

  • 2 portobello mushrooms, stems removed
  • 1 large eggplant, sliced into 1/2-inch thick rounds
  • 2 bell peppers, any color, sliced into strips
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Brush the vegetables with olive oil and season with salt and pepper.
  3. Grill the portobello mushrooms for 5-7 minutes per side, or until tender.
  4. Grill the eggplant slices for 3-4 minutes per side, or until softened and slightly charred.
  5. Grill the bell peppers for 2-3 minutes per side, or until softened and slightly blistered.
  6. Serve immediately.

Coursey Graves Bennett Mountain Estate Blend:
Blue Cheese Burgers with Caramelized Onions

This bold blend deserves a burger with equally bold flavors.

Ingredients:

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hamburger buns
  • 4 oz. blue cheese (about 1 cup, crumbled)
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 8 butter lettuce leaves

Instructions:

  1. In a large bowl, combine ground beef, salt, and pepper. Mix gently to combine without overworking the meat.
  2. Form the mixture into 4 equal patties.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the onions and cook, stirring occasionally, until softened and caramelized, about 15 minutes.
  5. Preheat your grill to medium-high heat. Grill the burgers for 3-4 minutes per side for medium-rare, or desired doneness.
  6. Toast the hamburger buns on the grill for the last minute of cooking.
  7. Place a burger on each toasted bun, top with blue cheese and caramelized onions, and butter lettuce. Enjoy!
